- 1 lb large shrimp, peeled and deveined
- 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces
- 4 garlic cloves, minced
- Juice and zest of 1 lemon
- 2 tablespoons olive oil
- 1 tablespoon butter (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 2 tablespoons chopped fresh parsley
Instructions
- Rinse and pat dry shrimp. Season with salt and pepper.
- Trim and cut asparagus into bite-sized pieces.
- In a large skillet over medium heat, add olive oil and sauté garlic for 1–2 minutes until fragrant.
- Add shrimp and cook for 2–3 minutes per side until pink. Remove and set aside.
- Add asparagus to the skillet. Sauté for 3–4 minutes until just tender.
- Return shrimp to pan, add lemon zest, juice, and butter. Toss for 1–2 minutes.
- Garnish with parsley and red pepper flakes. Serve hot.
Notes
Make it spicy with more red pepper flakes or hot sauce. Add zucchini, cherry tomatoes, or bell peppers for variety. For a dairy-free version, use ghee or coconut oil instead of butter.
