Description
A creamy, layered Love Cake made with rich chocolate cake mix, sweet ricotta, and fluffy chocolate pudding topping. Perfect for Valentine’s Day or any romantic celebration.
Ingredients
2 (15 oz) containers ricotta cheese
1 cup granulated sugar
1 tsp vanilla extract
4 large eggs (room temperature)
1 box (15.25 oz) chocolate or Devil’s Food cake mix
1/2 cup canola or vegetable oil
1 cup water
3 large eggs
1 box (5 oz) instant chocolate pudding mix
3 cups cold whole milk
1 (8 oz) container whipped topping, thawed
Instructions
1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. In a bowl, blend ricotta cheese, sugar, and vanilla until smooth.
3. Add eggs one at a time, mixing until fully combined.
4. In another bowl, combine cake mix, oil, water, and eggs until smooth.
5. Pour the cake batter evenly into the prepared pan.
6. Gently pour the ricotta mixture over the cake batter without mixing.
7. Bake for 60–70 minutes until set in the center.
8. Cool completely to room temperature.
9. Whisk pudding mix and cold milk until smooth, then let rest for 2–3 minutes.
10. Fold in whipped topping until fully combined.
11. Spread the pudding mixture over the cooled cake.
12. Refrigerate at least 4 hours before serving for best texture.
Notes
The ricotta layer sinks during baking, creating a natural custard base.
Do not stir layers together before baking.
Cake can be made a day ahead for deeper flavor.
Substitute half the ricotta with mascarpone for extra richness.
Store in the fridge up to 5 days or freeze up to 3 months.
