Description

A quick, gluten-free, low-calorie cookie made with simple ingredients. Soft out of the oven, naturally sweetened, and perfect for healthy dessert lovers.

Ingredients

Scale

1 1/4 cups finely ground almond flour

2/3 cup creamy natural peanut butter

1/4 cup maple syrup, honey, or sugar-free syrup

Flaky sea salt (optional)

Instructions

1. Preheat oven to 350 °F (175 °C) and line a baking sheet with parchment paper.

2. Combine almond flour, peanut butter, and syrup in a large bowl until a thick dough forms.

3. Shape dough into balls and place on the prepared baking sheet.

4. Flatten each ball with a fork in a crisscross pattern.

5. Bake for 10–15 minutes until edges are set and slightly golden.

6. Cool on the baking sheet for 5–10 minutes before transferring to a wire rack.

Notes

Use natural, room-temperature peanut butter without added sugars or oils.

Optional flaky salt can enhance sweet and salty flavor contrast.

Cookies firm up as they cool; they may appear soft out of the oven.

You can substitute syrup with honey or sugar-free alternatives like monk fruit or allulose.
