- 1½ cups graham cracker crumbs
- ¼ cup sugar
- ½ cup melted unsalted butter
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- ¼ cup lemon juice
- ¼ cup lime juice
- 1 tbsp lemon zest
- 1 tbsp lime zest
- ½ cup chopped pistachios
- ½ cup chopped fresh cherries

Instructions
- Preheat oven to 325°F (163°C). Lightly grease a 9-inch springform pan and line the base with parchment.
- In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of the pan and bake for 10 minutes. Set aside to cool.
- Beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing well.
- Blend in lemon juice, lime juice, lemon zest, and lime zest. Fold in chopped pistachios and cherries.
- Pour filling over crust, smooth the top, and bake for 50–60 minutes until center is slightly jiggly.
- Turn off oven, crack door, and let cheesecake cool inside for 1 hour.
- Refrigerate for at least 4 hours or overnight.
- Before serving, garnish with whipped cream, whole cherries, and chopped pistachios.
Notes
