Description
A simple, sunny dessert where the batter rises around tangy lemon filling to create a soft cake-like center and buttery golden crust. Made with pantry staples and minimal prep.
Ingredients
½ cup (1 stick) butter
1 cup all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
1 cup granulated sugar
1 cup buttermilk (or whole milk)
1 teaspoon vanilla extract
1 teaspoon lemon extract (optional)
21 oz can lemon pie filling
Instructions
1. Preheat oven to 350°F (175°C).
2. Place butter in a 9×9-inch baking dish and melt in oven for 3-4 minutes.
3. In a bowl, whisk together flour, baking powder, salt, and sugar.
4. Add buttermilk, vanilla, and lemon extract; whisk until just combined.
5. Pour batter over melted butter (do not stir).
6. Spoon lemon pie filling evenly over the batter.
7. Bake for 45-55 minutes until golden brown at edges.
8. Cool slightly before serving.
Notes
Lemon extract is optional; you can also add fresh lemon zest for more tartness.
Feel free to use homemade lemon filling or other fruit pie fillings like blackberry or cherry.
This recipe also works in ramekins — just reduce bake time slightly.
Pairs beautifully with vanilla ice cream, whipped cream, or a drizzle of honey.
