- 1 tbsp oil from sun-dried tomatoes
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 tbsp tomato paste
- 1 lb chicken breasts or thighs, chopped
- 6 cups low-sodium chicken broth
- 2 tbsp flour
- 1 cup heavy cream
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 1/2 cups small pasta (ditalini, elbows, or shells)
- 2 cups fresh baby spinach, roughly chopped
- 1/2 cup grated Parmesan cheese
Instructions
- Heat oil in a Dutch oven over medium heat. Add chopped onion and cook until translucent. Stir in garlic and cook for 1 minute.
- Add sun-dried tomatoes and tomato paste. Cook for 2 minutes to deepen flavor.
- Add chicken and pour in chicken broth. Bring to a simmer and cook until chicken is fully cooked.
- In a separate bowl, whisk flour with a bit of hot broth to create a slurry. Slowly stir into the soup.
- Stir in cream, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Add pasta and cook until al dente. Stir in spinach and cook until wilted.
- Finish with Parmesan cheese. Stir until melted and fully incorporated.
Notes
For best texture, cook pasta separately and add to bowls just before serving. For a dairy-free version, use coconut milk or cashew cream.
