Ingredients
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 medium zucchinis, sliced into half-moons
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
Mediterranean Seasoning:
1 teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional)
Topping:
½ cup shredded mozzarella cheese (or feta)
¼ cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (garnish)
Instructions
1. Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, toss chicken, zucchini, tomatoes, onion, garlic, olive oil, and seasonings.
3. Spread mixture evenly in baking dish and top with mozzarella and Parmesan cheese.
4. Cover with foil and bake for 20 minutes.
5. Remove foil and bake for another 10–15 minutes until cheese is golden and chicken is cooked through.
6. Garnish with fresh parsley and serve warm.
