Ingredients
1 tbsp olive oil
Salt to taste
Black pepper to taste
1/2 tsp garlic powder
1 tbsp butter
2 large chicken breasts, room temperature
3/4 cup chicken broth
1/2 medium onion, finely chopped
1 to 2 tbsp chopped parsley (preferably fresh)
1 package (5.2 oz) Boursin Fine Herbs & Garlic cheese
Instructions
1. Slice chicken breasts in half lengthwise to create 4 thin cutlets. Season both sides with garlic powder, salt, and black pepper.
2. Heat olive oil and butter in a skillet over medium-high heat. Sear the chicken for 5–6 minutes on each side until golden and cooked through. Remove and set aside.
3. Lower heat to medium and sauté chopped onion in the same skillet for about 5 minutes until soft and slightly golden. Add a small splash of oil if the pan dries out.
4. Pour in chicken broth and add Boursin cheese. Stir over low heat until cheese fully melts and sauce becomes smooth. Let simmer for 5 minutes to thicken slightly. Stir in chopped parsley.
5. Return cooked chicken and juices to skillet. Simmer 2–3 minutes until heated through. Adjust seasoning and thin sauce with extra broth if needed. Serve immediately.

Pound chicken evenly to about 3/4 inch for uniform cooking.
