No-Bake Cookie Dough Bites are a quick freezer dessert with a chewy cookie dough center, creamy peanut butter layer, and crisp chocolate shell. These bite-sized treats are naturally gluten-free, require no baking, and come together in minutes using simple ingredients.
Ingredients
1¾ cups almond flour
¼ cup maple syrup
¼ cup coconut oil, melted and cooled
2 teaspoons vanilla extract
1 cup mini chocolate chips
1 cup creamy peanut butter
2 teaspoons coconut oil, melted (for peanut butter layer)
2 tablespoons maple syrup (for peanut butter layer)
1 cup mini chocolate chips (for chocolate coating)
2 teaspoons coconut oil (for chocolate coating)
Instructions
1. Combine almond flour, maple syrup, melted coconut oil, and vanilla extract in a bowl and mix until a soft dough forms. Fold in mini chocolate chips.
2. Melt chocolate chips with coconut oil in short microwave intervals, stirring until smooth.
3. Spoon a small amount of melted chocolate into the bottom of each cavity of an ice cube tray to create a thin base. Freeze briefly until firm.
4. In a separate bowl, mix peanut butter, melted coconut oil, and maple syrup until smooth and easily spreadable.
5. Remove the tray from the freezer and fill each cavity about three quarters full with the cookie dough mixture, pressing lightly to compact.
6. Spread a thin layer of the peanut butter mixture on top of the cookie dough layer.
7. Cover each cavity with the remaining melted chocolate to seal the layers.
8. Freeze the tray for at least 2 hours until the bites are completely solid.
9. Remove from the tray and allow to sit for 1 to 2 minutes before eating if very firm.
Notes
Mini chocolate chips distribute evenly through the dough and work best for bite-sized treats.
Use smooth, slightly runny peanut butter so the middle layer spreads easily.
Coconut oil helps bind the dough and creates a firm chocolate coating once frozen.
Silicone ice cube trays work best because the frozen bites release easily.
Allow the bites to sit briefly at room temperature before eating for the best texture.
