Rich, fudgy, and packed with protein these No-Bake Cottage Cheese Brownie Batter Protein Bites are the perfect quick breakfast or post-workout snack. They taste like dessert but take just 10 minutes to make and keep you full for hours.
Ingredients
1 cup cottage cheese (low-fat or full-fat)
2 tablespoons honey, maple syrup, or sweetener of choice
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
1 scoop protein powder (optional, chocolate or vanilla)
2 tablespoons chopped nuts or seeds
Handful of mini chocolate chips (optional)
Instructions
1. Blend cottage cheese, sweetener, and vanilla until smooth.
2. Pour into a bowl and stir in cocoa powder and protein powder until thick.
3. Fold in nuts, seeds, and chocolate chips if using.
4. Scoop and roll into 1-inch balls by hand.
5. Place on a parchment-lined tray and refrigerate for 1 hour or freeze for 30 minutes.
6. Store in an airtight container in the refrigerator for up to 5 days.
Notes
Add more cocoa or protein powder if the mixture is too soft.
Use a splash of almond milk if the batter is too thick.
Roll finished bites in shredded coconut, cocoa, or crushed nuts for decoration.
Freeze extra bites for up to 3 weeks; thaw for 5–10 minutes before eating.
