Description
A creamy, comforting one-pot chicken orzo dinner ready in just 30 minutes. Perfect for busy nights.
Ingredients
1 tablespoon olive oil
1 lb boneless skinless chicken breasts, cubed
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Italian seasoning
1 tablespoon minced garlic
1 cup chopped onion
1/2 cup chopped carrots
1/2 cup chopped celery
1 cup orzo pasta (uncooked)
2 cups low sodium chicken broth
1/2 cup milk (any kind)
1/4 cup parmesan cheese
2 tablespoons chopped parsley
Instructions
1. Heat olive oil in a pot.
2. Add chicken, season with salt, pepper, and Italian seasoning. Cook until browned.
3. Stir in garlic, onion, carrots, and celery. Cook for 3–5 minutes until softened.
4. Add orzo, chicken broth, and milk. Stir and bring to a boil.
5. Reduce heat to a simmer and cook for 8–10 minutes, stirring occasionally until orzo is tender.
6. Stir in parmesan cheese and parsley. Serve warm.
Notes
Can substitute chicken breasts with thighs.
Use gluten-free orzo if needed.
Any milk (dairy or non-dairy) works.
Add spinach or peas for extra veggies.
Store in an airtight container for up to 4 days in the fridge.
Freezing not recommended due to orzo texture changes.
