Ingredients
10 oz smoked sausage (Andouille or kielbasa)
4 oz pasta (penne or rigatoni)
2 tbsp Cajun seasoning
1 tbsp olive oil
1 cup diced bell peppers (mixed colors)
½ cup diced onion
2 cups low-sodium chicken broth (more if needed)
1 cup heavy cream
1 cup shredded Parmesan cheese
½ tsp garlic powder
¼ tsp cayenne pepper (optional)
1 cup fresh spinach (optional)
Chopped parsley for garnish
Instructions
1. Slice sausage into thin rounds and chop bell peppers and onions.
2. In a large skillet, heat olive oil and brown the sausage, then set it aside.
3. In the same skillet, cook the bell peppers and onions until soft.
4. Stir in Cajun seasoning and optionally a bit of flour to thicken.
5. Pour in chicken broth and bring to a simmer.
6. Add pasta and cook until tender, stirring occasionally.
7. Lower the heat and mix in heavy cream and Parmesan cheese until smooth.
8. Return sausage to the pan and combine.
9. Taste and adjust seasoning only if needed.
10. Garnish with parsley or red pepper flakes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat gently with a splash of broth or cream to preserve the sauce texture.
