Description

These Oreo Shamrock Shake Cookies are soft, chewy, and packed with crushed Mint Oreos and cool peppermint flavor. Inspired by the classic Shamrock Shake, they bake up thick with golden edges and tender centers, making them a festive and minty dessert perfect for St Patrick’s Day or anytime you crave a sweet mint treat.

Ingredients

Scale

2 ¾ cups all purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 cup unsalted butter, softened

1 ½ cups granulated sugar

1 large egg, room temperature

1 teaspoon vanilla extract

1 teaspoon peppermint extract

Green food coloring, optional

About 14 Mint Oreos, crushed

Instructions

1. Preheat oven to 350°F and line baking sheets with parchment paper.

2. Whisk together flour, baking soda, baking powder, and salt in a bowl.

3. In a separate bowl, beat softened butter and sugar until light and fluffy, about 2 to 3 minutes.

4. Mix in the egg, vanilla extract, and peppermint extract until fully combined. Add green food coloring if using and mix until evenly colored.

5. Gradually add the dry ingredients to the wet mixture, mixing just until incorporated.

6. Fold in the crushed Mint Oreos, distributing them evenly throughout the dough.

7. Scoop about 3 tablespoons of dough per cookie and place on prepared baking sheets. Chill the dough balls for at least 1 hour to reduce spreading.

8. Bake for 11 to 12 minutes, until the edges are lightly golden and the centers are set.

9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Chilling the dough helps prevent spreading and improves texture.

If Mint Oreos are unavailable, use regular Oreos and slightly increase peppermint extract for added mint flavor.

Food coloring is optional and only affects appearance.

Store cookies in an airtight container at room temperature for up to 5 days.

Baked cookies can be frozen for up to 3 months.

Unbaked dough balls can be frozen and baked from frozen, adding a few extra minutes to bake time.
