Description
Juicy, golden, and packed with flavor these oven baked chicken thighs are perfectly seasoned and simple to make. Crispy on the outside, tender inside, and ready in under an hour!
Ingredients
2 pounds bone-in, skin-on chicken thighs (6–8 pieces, patted dry)
2 tablespoons olive oil
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon ground paprika
1 teaspoon Italian seasoning
1 teaspoon dried parsley
2 teaspoons salt
½ teaspoon black pepper
1 tablespoon butter, diced (optional)
Instructions
1. Preheat oven to 400°F and place a foil-lined, rimmed baking sheet inside to heat.
2. In a large bowl, mix olive oil with all seasonings to form a paste.
3. Add chicken thighs in batches, coating and rubbing the seasoning into each piece.
4. Remove the hot pan from the oven and place seasoned chicken thighs on it.
5. Dot with butter if using.
6. Bake for 20 minutes, then baste with juices.
7. Return to oven and bake for another 10 minutes.
8. Baste again, then finish baking for 5–15 minutes more, until chicken reaches an internal temperature of 165°F.
9. Optionally, broil for 1–2 minutes to crisp the skin.
Notes
Rub seasoning paste thoroughly into chicken to ensure flavor stays during baking.
If seasoning washes off, sprinkle an extra mix of dry seasonings after the second basting.
Always use a meat thermometer to confirm an internal temperature of 165°F.
Use a rimmed pan or baking dish to contain juices.
