Juicy, flavorful, and easy oven baked chicken thighs. Ready in 45 minutes and seasoned to perfection for a quick weeknight meal.


Ingredients

2 tablespoons olive oil

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon ground paprika

1 teaspoon Italian seasoning

1 teaspoon dried parsley

2 teaspoons salt

½ teaspoon black pepper

2 pounds chicken thighs (68 pieces), patted dry

1 tablespoon butter, diced (optional)


Instructions

1. Preheat oven to 400°F. Line a rimmed baking sheet with foil and place in the oven to heat.

2. Mix olive oil with all the seasonings in a large bowl to form a paste.

3. Add chicken thighs to the bowl and coat well with the seasoning paste.

4. Remove chicken individually, rubbing seasoning into the skin.

5. Carefully place chicken on the preheated pan, dot with butter if using.

6. Bake for 20 minutes. Baste with pan juices.

7. Return to oven, bake 10 more minutes. Baste again.

8. Finish baking for another 5–15 minutes, until internal temperature reaches 165°F.

9. Optionally broil for 1–2 minutes for crispy skin.

Notes

You can substitute Italian seasoning with dried oregano.

Use any cooking oil if olive oil is unavailable.

Skip the butter for a dairy-free version.

Use a meat thermometer to confirm 165°F internal temperature.

For extra seasoning after basting, mix a pinch of each main spice and sprinkle before final bake.
