- 3–4 ripe peaches, sliced into wedges
- 1 cucumber, thinly sliced
- 1 ball of burrata cheese
- Fresh basil leaves, torn
- 1 tablespoon lemon juice
- Zest of 1 lemon
- 1 teaspoon malt vinegar (or white wine vinegar)
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt, to taste
- Freshly cracked black pepper, to taste
Instructions
- In a small bowl, whisk together lemon juice, lemon zest, malt vinegar, honey, olive oil, salt, and pepper to create the dressing. Set aside.
- Slice the peaches into thin wedges and slice the cucumber thinly for crunch.
- Arrange peach slices, cucumber, and torn basil leaves on a serving platter.
- Place the burrata in the center, letting the creamy inside spill out naturally.
- Drizzle the honey-citrus dressing evenly over the salad.
- Garnish with additional basil or a crack of black pepper if desired. Serve immediately.
