  • 34 ripe peaches, sliced into wedges
  • 1 cucumber, thinly sliced
  • 1 ball of burrata cheese
  • Fresh basil leaves, torn
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 teaspoon malt vinegar (or white wine vinegar)
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  1. In a small bowl, whisk together lemon juice, lemon zest, malt vinegar, honey, olive oil, salt, and pepper to create the dressing. Set aside.
  2. Slice the peaches into thin wedges and slice the cucumber thinly for crunch.
  3. Arrange peach slices, cucumber, and torn basil leaves on a serving platter.
  4. Place the burrata in the center, letting the creamy inside spill out naturally.
  5. Drizzle the honey-citrus dressing evenly over the salad.
