- ½ cup granulated sugar

- 1 teaspoon ground cinnamon
- Pinch of salt
- ¾ cup light brown sugar
- ½ cup all-purpose flour
- ½ cup old-fashioned oats
- 1 teaspoon ground cinnamon
- ½ cup salted butter, cold and cubed (or unsalted + extra pinch of salt)
- Optional: 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a 9×9-inch baking dish (double the recipe for a 9×13-inch pan).
- In a large mixing bowl, combine the peach slices with granulated sugar, flour, cornstarch, cinnamon, and salt. Stir until the peaches are evenly coated, then pour the mixture into the prepared baking dish.
- In a separate bowl, mix together brown sugar, flour, oats, and cinnamon. Add in the cold, cubed butter and use your fingers or a pastry cutter to work it into the dry ingredients until the mixture resembles coarse crumbs.
- Evenly sprinkle the crumble topping over the peach filling. Bake for 25–30 minutes, or until the top is golden brown and the peach juices are bubbling around the edges.
- Let the crisp rest for 10 minutes before serving.

Serve warm with vanilla ice cream, whipped cream, caramel drizzle, or a sprinkle of chopped nuts. Store leftovers in an airtight container in the fridge for up to 4 days. Use firm, just-ripe peaches or well-drained frozen/canned ones. For gluten-free, use certified gluten-free oats and flour substitutes.
