Ingredients
**For the Crust**
1½ cups all-purpose flour
½ cup chilled butter, cubed
3 tbsp chilled shortening
2 tbsp sugar
Pinch of salt
**For the Filling**
4–5 fresh peaches, peeled and sliced
½ cup sugar
3 tbsp flour
½ tsp cinnamon
**For Topping**
Milk for brushing
Raw or granulated sugar for sprinkling
Instructions
1. Combine flour, butter, shortening, sugar, and salt in a food processor and pulse until crumbly.
2. Shape into a ball, flatten into a disk on parchment, wrap, and chill for at least 2 hours.
3. Preheat oven to 375°F.
4. Peel and slice peaches, then toss with sugar, flour, and cinnamon in a bowl.
5. Roll out dough into an 11-inch circle on parchment.
6. Arrange peach slices in center, leaving a 1–1½ inch border. Discard excess juice.
7. Fold dough over fruit in pleats. Brush crust with milk, sprinkle with sugar.
8. Bake for 50–60 minutes; tent loosely with foil in final 10 minutes.
9. Cool on baking sheet for 15–20 minutes before slicing.
Notes
Use ripe, seasonal peaches for best flavor.
Don’t skip chilling the dough—it ensures a flaky crust.
You can prepare the dough a day in advance.
