Description

Rich, creamy, and refreshingly minty, these dairy-free Peppermint Truffles are the perfect easy Christmas dessert. No baking needed — just melt, chill, and enjoy!


Ingredients

Scale

1 cup dairy-free dark chocolate chips

¾ cup coconut milk (or any dairy-free milk)

3 tablespoons coconut flour

2 teaspoons peppermint extract

¼ teaspoon salt

Chocolate Layer:

½ cup dairy-free dark chocolate chips

1 tablespoon coconut oil

½ teaspoon peppermint extract


Instructions

1. Combine chocolate chips, coconut milk, peppermint extract, and salt in a small saucepan. Heat on low, whisking until smooth.

2. Transfer mixture to a bowl and mix in coconut flour, breaking up any clumps.

3. Cover the bowl and chill for at least 1 hour, until firm enough to roll.

4. Once firm, roll into 15 even balls and refrigerate again while preparing the coating.

5. Melt remaining chocolate chips with coconut oil in the microwave, stirring every 20 seconds until smooth.

6. Stir in peppermint extract, then dip each truffle using two forks, letting excess drip off.

7. Place coated truffles on parchment paper and chill for 30 minutes to set.

Notes

Chill dough for at least 1 hour for easier rolling.

Use two forks to dip and drain excess chocolate to prevent a chocolate ring.

Whisk chocolate instead of stirring with a spoon to keep it smooth.

Avoid overheating the chocolate or it may seize.

Optional toppings: crushed candy canes, flaky sea salt, or a dusting of cacao powder.

Truffles can be rolled in cocoa powder instead of coated in chocolate if preferred.
