Ingredients
2 large chicken breasts pounded to even thickness
1 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
1 tsp salt
1/4 tsp black pepper
4 slices fresh mozzarella thin sliced
1/4 cup basil pesto
2 tbsp balsamic glaze
1/2 lemon
1 cup diced tomatoes
2 tbsp fresh basil leaves thinly sliced
1 garlic clove grated
1 tbsp extra virgin olive oil
1/2 tsp red pepper flakes
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Combine diced tomatoes, sliced basil, grated garlic, olive oil, red pepper flakes, salt, and pepper in a bowl to create the bruschetta topping and set aside.
2. Coat the chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly seasoned.
3. Heat olive oil in a large skillet over medium heat and cook the chicken for about 5 to 7 minutes per side until fully cooked, squeezing fresh lemon juice over the chicken halfway through cooking.
4. Lower the heat and place two slices of mozzarella on each chicken breast then cover the pan briefly so the cheese melts.
5. Remove the skillet from heat, spread basil pesto over the chicken, spoon the tomato bruschetta mixture on top, and drizzle with balsamic glaze before serving.
Notes
Flattening the chicken breasts helps them cook evenly and stay juicy.
Add mozzarella only after the chicken is fully cooked to prevent overcooking.
Chicken is safely cooked when the internal temperature reaches 165°F or 74°C.
Homemade basil pesto provides fresher flavor than most store bought versions.
