Ingredients
1½ cups graham cracker crumbs
¼ cup granulated sugar (divided)
6 tablespoons melted butter
16 oz cream cheese (softened)
¼ cup sour cream
½ teaspoon vanilla extract
2 eggs (room temperature)
1½ cups fresh strawberries (chopped)
3 tablespoons water
1 tablespoon lemon juice
2 teaspoons cornstarch
½ cup white chocolate chips
Instructions
1. Preheat oven to 350°F and line a square baking pan with parchment, then grease lightly
2. Mix graham cracker crumbs, sugar, and melted butter, then press firmly into the pan to form crust
3. Beat cream cheese, sugar, sour cream, and vanilla until smooth, then gently mix in eggs
4. Spread filling over crust evenly, then bake for 25 to 35 minutes until center is slightly jiggly
5. Cool at room temperature, then refrigerate for several hours until fully set
6. Cook strawberries, sugar, water, lemon juice, and cornstarch over medium heat, stirring until thickened, then cool
7. Cut chilled cheesecake into bars, spoon strawberry topping over each, and drizzle with melted white chocolate
