Description
A light, fruity drink that blends pineapple and peach with lime for a refreshing summer sip. Tastes like peach pie in a glass—perfect with tacos or just for cooling off.
Ingredients
3 ripe peaches, peeled and cubed
1 cup fresh pineapple chunks
2 cups water (divided use)
3 limes, juiced
2 tablespoons simple syrup (or to taste)
1 cup frozen peach slices
Fresh mint (for garnish)
Lime slices (for garnish)
Instructions
1. Make the simple syrup by combining equal parts sugar and water in a saucepan over medium heat. Stir until sugar dissolves, simmer for 1–2 minutes, then let cool.
2. Blend the chopped peaches, pineapple, and 1 cup of water in a blender until smooth.
3. Strain the mixture using a fine mesh sieve into a bowl, pressing with a spoon to extract all the liquid.
4. In a pitcher, combine the strained juice with the remaining 1 cup water, fresh lime juice, and simple syrup.
5. Taste and adjust sweetness if needed. Refrigerate until cold.
6. When ready to serve, add frozen peach slices and optionally some crushed ice.
7. Pour into glasses and garnish with fresh mint and lime slices.
Notes
Use ripe fruit for the best flavor.
Frozen peach slices help chill the drink without watering it down.
Add sparkling water or coconut water for a fizzy twist.
To serve as a cocktail, add a splash of tequila.
