Description

Pistachio Lush is a creamy layered dessert made with a buttery walnut crust, sweet cream cheese filling, smooth pistachio pudding, and fluffy whipped topping. It chills beautifully and slices into perfect squares, making it ideal for holidays, potlucks, and family gatherings.


Ingredients

1 cup all-purpose flour

1/2 cup butter, cut into pieces

1 cup chopped walnuts

8 ounces cream cheese, softened

1 cup confectioner’s sugar

1 cup whipped topping

2 packages instant pistachio pudding mix

3 cups milk

2 cups whipped topping for top layer

1/2 cup toasted almonds, optional


Instructions

1. Heat oven to 350°F.

2. Cut butter into flour until small crumbs form, then mix in chopped walnuts.

3. Press mixture firmly into a 13×9-inch pan.

4. Bake about 20 minutes, then cool completely.

5. Mix cream cheese, confectioner’s sugar, and 1 cup whipped topping until smooth. Spread over cooled crust.

6. Whisk pudding mixes with milk until beginning to thicken, then spread over cream cheese layer.

7. Refrigerate 2 to 3 hours until fully set.

8. Spread remaining whipped topping on top and sprinkle toasted almonds if desired.

9. Chill until ready to serve and slice into 12 pieces.

Notes

Ensure crust is fully cooled before adding the cream cheese layer.

Allow pistachio pudding layer to chill thoroughly so layers cut cleanly.

Toasted almonds add extra texture and flavor but are optional.
