Easy, moist pumpkin bars topped with rich cream cheese frosting — a cozy fall favorite perfect for gatherings or treats at home.
Ingredients
4 eggs, beaten
16 oz pumpkin puree (not pie filling)
1½ cups sugar
1 cup cooking oil (or applesauce substitute)
2 cups all-purpose flour
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
Optional: ½ tsp each ginger, cloves, pumpkin pie spice
1 can cream cheese frosting or homemade:
8 oz cream cheese, softened
½ cup unsalted butter, softened
2 tsp vanilla extract
4 cups confectioners’ sugar
Instructions
1. Preheat oven to 350°F.
2. In a large bowl, mix eggs, pumpkin, sugar, and oil until smooth.
3. Add flour, baking powder, baking soda, cinnamon, and optional spices. Stir gently.
4. Spread batter into an ungreased 15x10x1 inch pan.
5. Bake 25–30 minutes until set and lightly browned.
6. Cool completely before frosting.
7. Spread cream cheese frosting evenly over cooled bars.
8. Cut into squares and serve.
Notes
Do not over-mix batter.
Cool completely before frosting.
For thicker bars, use 9×13 pan and adjust baking time.
Chill bars before serving for best flavor.
Decorate with cinnamon or festive toppings.
Refrigerate up to 4 days or freeze unfrosted bars up to 3 months.
