Ingredients
2 cups graham cracker crumbs
1 tbsp granulated sugar
½ cup unsalted butter, melted
16 oz cream cheese, softened
1½ cups powdered sugar
16 oz whipped topping, thawed (divided)
3.4 oz box instant vanilla pudding
12 oz can evaporated milk
15 oz can pure pumpkin
1½ tsp pumpkin spice
¼ cup pecans, chopped
Instructions
1. Mix graham cracker crumbs, sugar, and melted butter in a small bowl.
2. Press mixture into a 9×13 inch baking dish to form crust.
3. Beat cream cheese and powdered sugar until combined.
4. Beat in 1½ cups whipped topping on medium speed.
5. Spread cheesecake mixture over crust; refrigerate.
6. Beat vanilla pudding with evaporated milk.
7. Add pumpkin and pumpkin spice; mix well.
8. Fold in ½ cup whipped topping.
9. Spread pumpkin mixture over cheesecake layer.
10. Spread remaining 2 cups whipped topping over pumpkin layer.
11. Top with chopped pecans.
12. Refrigerate for at least 2 hours before serving.
