- 1 box yellow cake mix
- 3 ripe bananas, mashed
- 2 large eggs
- 1/3 cup vegetable oil (or unsweetened applesauce)
- 1/2 cup chocolate chips (optional)
- 1/2 cup chopped walnuts or pecans (optional)
- 1 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Add cake mix, eggs, and oil (or applesauce) to the mashed bananas.
- Stir until just combined—do not overmix.
- If using, fold in chocolate chips, nuts, or cinnamon.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
- Slice and enjoy!
Notes
For a healthier option, swap vegetable oil for applesauce. You can also use a gluten-free cake mix to make this recipe gluten-free.
