Description
A light, comforting pot of Quick & Easy Wonton Soup with tender dumplings, bok choy, and shiitake mushrooms in a garlicky chicken broth. Ready in 30 minutes for an easy weeknight dinner.
Ingredients
32 oz low-sodium chicken broth
2 cups water
2 cloves garlic, pressed
20 frozen wontons (Trader Joe’s Chicken Cilantro Mini Wontons recommended)
8 oz shiitake mushrooms, sliced
4 baby bok choy, chopped
1 tbsp sesame oil
2 tbsp low-sodium soy sauce
3 stalks green onion, sliced for garnish
Instructions
1. Combine water, chicken broth, and pressed garlic in a pot; bring to a boil.
2. Add frozen wontons.
3. Add chopped bok choy and sliced mushrooms.
4. Simmer on medium-high for about 15 minutes, until wontons float.
5. Stir in soy sauce and sesame oil.
6. Garnish with green onions and serve immediately.
Notes
Use low-sodium broth to avoid excess saltiness after adding soy sauce.
Thoroughly wash bok choy to remove hidden dirt.
Don’t overcook wontons; they are ready when they float.
Mushrooms add earthiness; shiitake preferred, but other varieties are fine.
Other green veggies like spinach, cilantro, or broccoli can be added.
Substitute beef or veggie broth if desired.
Homemade dumplings like gyoza or pelmeni can replace frozen wontons.
Not suitable for freezing; refrigerate for up to 5 days.
To reheat, warm on stovetop over medium heat.
