Description

Quick Southwest Chicken Salad is a bold, creamy, and fresh dish ready in just 10 minutes. Packed with shredded chicken, beans, corn, and a zesty lime dressing, it works perfectly for meal prep, wraps, sandwiches, or a light lunch.


Ingredients

1 lb cooked shredded chicken (about 23 breasts)

1 can (15.5 oz) black beans, rinsed and drained

1 can (15.25 oz) corn, drained

12 fresh jalapeños, seeded and chopped

¾ cup cherry tomatoes, quartered

½ cup red onion, chopped

¼ cup pepitas or sunflower seeds

¾ cup mayonnaise or Greek yogurt

¼ cup fresh lime juice

1 tablespoon chili powder

1 teaspoon garlic powder

1 teaspoon cumin

¼ teaspoon paprika

¼ teaspoon salt


Instructions

1. Mix the dressing ingredients in a bowl until smooth and fully combined

2. In a separate large bowl, combine chicken, beans, corn, jalapeños, tomatoes, onion, and seeds

3. Pour dressing over the mixture and stir until everything is evenly coated

4. Serve immediately on its own, in sandwiches, wraps, or over greens

Notes

Keeps well refrigerated in an airtight container for up to 4–5 days

Flavors improve after sitting, making leftovers taste better the next day

Pepitas can be replaced with sunflower seeds if unavailable
