Ingredients
1 lb cooked shredded chicken (about 2–3 breasts)
1 can (15.5 oz) black beans, rinsed and drained
1 can (15.25 oz) corn, drained
1–2 fresh jalapeños, seeded and chopped
¾ cup cherry tomatoes, quartered
½ cup red onion, chopped
¼ cup pepitas or sunflower seeds
¾ cup mayonnaise or Greek yogurt
¼ cup fresh lime juice
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon cumin
¼ teaspoon paprika
¼ teaspoon salt
Instructions
1. Mix the dressing ingredients in a bowl until smooth and fully combined
2. In a separate large bowl, combine chicken, beans, corn, jalapeños, tomatoes, onion, and seeds
3. Pour dressing over the mixture and stir until everything is evenly coated
4. Serve immediately on its own, in sandwiches, wraps, or over greens

Keeps well refrigerated in an airtight container for up to 4–5 days
Flavors improve after sitting, making leftovers taste better the next day
