Description

Soft, chewy peanut butter cookies topped with melty chocolate hearts  these Quick Valentine’s Day Peanut Blossom Cookies are simple, festive, and perfect for last-minute Valentine’s gifting or cozy baking nights.


Ingredients

1.33 cups all-purpose flour

1/2 tsp baking soda

3/8 tsp salt

8 tbsp butter, softened to room temperature (about 70°F)

1/2 cup brown sugar

1/4 cup granulated sugar

1 egg, room temperature

3/4 cup creamy peanut butter

1.5 tsp vanilla extract

1/4 cup sugar (for rolling)

28 chocolate heart candies

1/4 tsp flaked sea salt


Instructions

1. Mix flour, baking soda, and salt in a small bowl and set aside.

2. In a large bowl, beat butter until fluffy, then add both sugars and beat until light and creamy.

3. Add egg, peanut butter, and vanilla, and mix until smooth.

4. Stir in the dry ingredients until just combined. Chill the dough for at least 1 hour.

5. Preheat oven to 350°F.

6. Roll dough into 1-tbsp balls, coat in sugar, and place 3 inches apart on lined baking sheets.

7. Bake for 11–13 minutes until edges are set.

8. Let cookies cool on the baking sheet for 5 minutes.

9. Press a chocolate heart into the center of each while still warm.

10. Transfer cookies to the freezer for 10 minutes to set the chocolate.

11. Sprinkle with sea salt once chilled and serve at room temperature.

Notes

Use room-temperature creamy peanut butter for best texture; natural peanut butter can cause spreading.

Chill dough to prevent cookies from flattening.

Add chocolate hearts 5 minutes after baking, while cookies are warm but firm.

Sprinkle sea salt for flavor balance.
