Ingredients
1 box red velvet cake mix
1 1/4 cup water
1/2 cup vegetable oil
3 eggs
16 oz cream cheese, softened
1/2 cup confectioner’s sugar
2 tbsp heavy cream
1 tsp vanilla extract
Instructions
1. Bake the red velvet cake according to box instructions using water, oil, and eggs. Let it cool completely.
2. Crumble the cake into fine pieces using your hands or a fork.
3. In a separate bowl, beat cream cheese and confectioner’s sugar until smooth.
4. Add heavy cream and vanilla extract; whip until stiff peaks form.
5. Line a baking sheet with parchment or wax paper.
6. Scoop the cheesecake mixture into small balls with a cookie scoop and place on the sheet.
7. Freeze for 1 hour or until firm.
8. Roll each ball in the red velvet cake crumbs until fully coated.
9. Store in the refrigerator until ready to serve.
Notes
You can freeze the finished cheesecake balls by placing them on a baking sheet for one hour, then transferring to an airtight container. Freeze up to 3 months.
To thaw, refrigerate overnight.
