Rich Chicken Stroganoff is a creamy, flavorful chicken dish with mushrooms, Dijon mustard, and sour cream. Perfect for cozy dinners, it’s hearty, quick, and deeply satisfying.
Ingredients
2 chicken breast halves
1/2 tsp garlic powder
Salt and black pepper, to taste
Flour, for coating
2 tbsp olive oil, plus more if needed
1 tbsp olive oil (for sauce)
1 tbsp butter
8 oz cremini mushrooms, sliced
1/2 medium onion, chopped
1 tbsp Dijon mustard
1 tbsp Worcestershire sauce
3 cloves garlic, minced
2/3 cup chicken broth
1/2 cup full-fat sour cream
Instructions
1. Cut chicken into 1-inch pieces and season with garlic powder, salt, and pepper. Lightly coat each piece in flour.
2. Heat olive oil in a skillet over medium-high heat. Cook chicken in two batches for 3 minutes per side until golden and cooked through. Set aside.
3. Reduce heat to medium. Add 1 tbsp olive oil and butter. Sauté mushrooms and onions for 6–8 minutes until browned.
4. Stir in mustard, Worcestershire sauce, and garlic. Cook for 1 minute until fragrant.
5. Pour in chicken broth, scraping up browned bits. Return chicken to the pan and simmer for 2 minutes.
6. Reduce heat to low, stir in sour cream gently until smooth, and heat through without boiling. Season to taste before serving.
Notes
To avoid dry chicken, use evenly cut pieces and cook only until done.
Let the pan cool slightly before adding sour cream to prevent curdling.
Dredging in flour helps thicken the sauce.
Cook mushrooms thoroughly to build depth of flavor.
Use room-temperature, full-fat sour cream for best texture.
