Rich and fudgy Roasted Chocolate Cherry Brownies made with Dutch process cocoa and jammy roasted cherries. A bakery style dessert with deep chocolate flavor and bursts of sweet tart fruit.
Ingredients
2 cups cherries, halved and pitted
Sugar for sprinkling cherries
1 1/3 cup white granulated sugar
2 large eggs
1 egg yolk
5 tbsp unsalted butter, melted
1/3 cup oil (canola or vegetable)
1 tsp vanilla extract
3/4 cup all-purpose flour
3/4 cup Dutch process cocoa powder
1 tbsp cornstarch
1 tsp salt
1 cup semi-sweet chocolate chips
Instructions
1. Roast halved cherries with a light sprinkle of sugar at high heat until softened and juicy, then let cool
2. Lower oven temperature and prepare an 8×8 pan with parchment and nonstick spray
3. Whisk together flour, cocoa powder, cornstarch, and salt in a separate bowl
4. Beat sugar, eggs, and egg yolk at high speed for several minutes until thick and pale
5. Mix in melted but slightly cooled butter, oil, and vanilla on low speed
6. Gently fold dry ingredients into the wet mixture to keep air in the batter
7. Fold in chocolate chips and half of the roasted cherries
8. Spread batter evenly in prepared pan
9. Bake until edges are set but center remains slightly underbaked
10. Cool completely in the pan, then briefly chill to firm up
11. Remove, top with remaining cherries, slice, and serve
