Ingredients
3 tbsp olive oil
1 medium yellow onion, diced
2 carrots, peeled and chopped
2 garlic cloves, minced
1 tbsp ground coriander
1 tbsp smoked paprika
1 tsp ground cumin
1/2 tsp black pepper
2 lb ground turkey
2 tbsp dried thyme
1 tsp salt
1 can (15 oz) pumpkin puree
2 cans (15 oz each) cannellini beans, drained and rinsed
2 cups chicken broth
1/2 cup heavy whipping cream
Instructions
1. Heat oil in a large pot over medium-high heat.
2. Sauté diced onions and chopped carrots until softened, about 5 minutes.
3. Add garlic, coriander, smoked paprika, cumin, and black pepper; stir and cook for 1 minute.
4. Push vegetables to the side, add ground turkey, break it apart, and cook until browned, about 8–10 minutes.
5. Stir in thyme, salt, pumpkin puree, drained beans, and chicken broth.
6. Mix well, bring to a simmer, reduce heat to low, and partially cover.
7. Cook for 25 minutes to develop flavor.
8. Remove from heat and stir in heavy cream until fully combined.
Notes
Brown the turkey thoroughly to avoid a mushy texture and enhance flavor.
Add pumpkin puree after cooking the meat to prevent sticking.
Always drain and rinse beans before adding to reduce starchiness.
Add cream at the end to prevent curdling.
