Description
Shamrock Lasagna is a creamy mint layered dessert made with a crunchy Oreo crust, sweet cream cheese filling, and fluffy green pudding. It chills into perfect slices and makes a festive treat for St. Patrick’s Day or any fun gathering.
Ingredients
36 Oreos, crushed very finely
1 stick unsalted butter, melted
8 ounces cream cheese, softened
1 cup powdered sugar
2 tubs (8 oz each) thawed frozen whipped topping, divided
3 boxes (3.4 oz each) cheesecake instant pudding mix
3 cups cold milk
1 teaspoon mint extract
Green gel food coloring
Oreo crumbs for garnish
Extra whipped topping for serving
Maraschino cherries for garnish
Green sprinkles for garnish
Instructions
1. Preheat oven to 375°F.
2. Mix crushed Oreos with melted butter until the mixture resembles wet sand.
3. Press into the bottom and sides of a 9×13-inch dish to form a crust.
4. Bake for 8–10 minutes and let cool completely.
5. Beat cream cheese, powdered sugar, and one tub of whipped topping until smooth.
6. Spread the cream cheese mixture evenly over the cooled crust.
7. Whisk pudding mixes with cold milk until thickened slightly.
8. Fold in the second tub of whipped topping, mint extract, and green food coloring.
9. Spread the pudding layer evenly over the cream cheese layer.
10. Refrigerate at least 4–6 hours or overnight until fully set.
11. Slice and top with Oreo crumbs, whipped topping, a cherry, and sprinkles before serving.
Notes
Best served cold for clean slices and best texture.
Store covered in the refrigerator and consume within 1–2 days.
Can be frozen up to 2 months; thaw overnight in the refrigerator before serving.
