Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup milk
  • 1 can kidney beans, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup frozen corn
  • 1 tsp chili powder
  • Salt and pepper, to taste
  • 4 medium potatoes, thinly sliced
  • 1½ cups shredded cheddar cheese

Instructions

  1. Brown the beef in a skillet with diced onion and minced garlic until fully cooked. Drain excess fat.
  2. Transfer the beef mixture into your slow cooker.
  3. Add the cream of mushroom soup, milk, beans, tomatoes with green chilies, corn, chili powder, salt, and pepper. Stir to combine.
  4. Layer the thinly sliced potatoes over the mixture. Press gently.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  6. 20 minutes before serving, sprinkle cheddar cheese on top and let melt.
