- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (10.5 oz) cream of mushroom soup
- ½ cup milk
- 1 can kidney beans, drained
- 1 can diced tomatoes with green chilies
- 1 cup frozen corn
- 1 tsp chili powder
- Salt and pepper, to taste
- 4 medium potatoes, thinly sliced
- 1½ cups shredded cheddar cheese
Instructions
- Brown the beef in a skillet with diced onion and minced garlic until fully cooked. Drain excess fat.
- Transfer the beef mixture into your slow cooker.
- Add the cream of mushroom soup, milk, beans, tomatoes with green chilies, corn, chili powder, salt, and pepper. Stir to combine.
- Layer the thinly sliced potatoes over the mixture. Press gently.
- Cover and cook on low for 6–7 hours or high for 3–4 hours.
- 20 minutes before serving, sprinkle cheddar cheese on top and let melt.
