Description

A cozy, citrusy, one-pot dinner featuring tender chicken thighs, zesty lemon, and fluffy Minute rice—perfect for weeknights.


Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1¾ cups chicken broth
  • ¼ cup fresh lemon juice
  • 1 cup diced leeks (sub with yellow onion if needed)
  • 1 tbsp chopped garlic
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp salted butter
  • 2 cups uncooked Minute Brand rice (add after 6 hours)

Instructions

  1. Add chicken broth, lemon juice, leeks, garlic, oregano, thyme, salt, and pepper to the slow cooker. Stir to combine.
  2. Place chicken thighs into the broth mixture and top with butter.
  3. Cover and cook on LOW for 6 hours without opening the lid.
  4. After 6 hours, stir in the Minute rice evenly. Cover and cook for 25 more minutes on LOW, until rice is tender.
  5. Fluff gently and serve hot. Garnish with parsley, lemon wedge, or parmesan if desired.

Notes

For extra citrus flavor, add 1 tsp lemon zest before serving. You can also add broccoli or spinach during the rice stage.
