- 2 lbs boneless, skinless chicken thighs
- 1¾ cups chicken broth
- ¼ cup fresh lemon juice
- 1 cup diced leeks (sub with yellow onion if needed)
- 1 tbsp chopped garlic
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp salted butter
- 2 cups uncooked Minute Brand rice (add after 6 hours)
Instructions
- Add chicken broth, lemon juice, leeks, garlic, oregano, thyme, salt, and pepper to the slow cooker. Stir to combine.
- Place chicken thighs into the broth mixture and top with butter.
- Cover and cook on LOW for 6 hours without opening the lid.
- After 6 hours, stir in the Minute rice evenly. Cover and cook for 25 more minutes on LOW, until rice is tender.
- Fluff gently and serve hot. Garnish with parsley, lemon wedge, or parmesan if desired.
Notes
For extra citrus flavor, add 1 tsp lemon zest before serving. You can also add broccoli or spinach during the rice stage.
