Description
Soft, chewy S’mores Cookie Bars layered with graham cracker cookie dough, gooey marshmallow creme, and melted chocolate chips. This easy dessert brings classic campfire s’mores flavors into a simple baked bar that is perfect for parties, potlucks, and cozy weekends.
Ingredients
1/2 cup (113 g) unsalted butter, softened to room temperature
3/4 cup (150 g) packed light or dark brown sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 cup (125 g) all-purpose flour
1 cup (120 g) graham cracker crumbs (about 8 full graham crackers)
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup (180 g) semi-sweet chocolate chips
1 heaping cup marshmallow creme
Instructions
1. Preheat oven to 350°F (177°C) and line an 8 or 9 inch square baking pan with parchment paper, leaving overhang for easy removal.
2. Cream softened butter and brown sugar together with a mixer until smooth and fluffy, about 3 minutes.
3. Mix in the egg and vanilla extract until fully combined, scraping the bowl if needed.
4. In a separate bowl combine flour, graham cracker crumbs, baking powder, and salt.
5. Add the dry ingredients to the wet mixture and mix until a sticky dough forms.
6. Press roughly two thirds of the dough into the prepared pan to create a thin base layer.
7. Spread marshmallow creme evenly over the dough layer.
8. Sprinkle chocolate chips evenly across the marshmallow layer.
9. Flatten portions of the remaining dough and place them across the top of the chocolate layer, leaving small gaps where the filling shows through.
10. Bake for 25 to 30 minutes until the top becomes lightly golden.
11. Cool completely in the pan on a rack, then lift out using parchment and cut into squares.
Notes
Bars freeze well for up to 3 months. Cool completely, slice, and layer with parchment in an airtight container before freezing.
Thaw frozen bars overnight in the refrigerator before serving.
Homemade marshmallow creme can be used. About 1 1/4 cups is needed for this recipe.
Regular marshmallows are not recommended because they melt into the dough during baking.
If graham crackers are unavailable, finely crushed digestive biscuits can be used instead.
