  • ½ cup melted butter
  • ¾ cup Domino® Golden Sugar
  • 1 tsp vanilla extract
  • 2 eggs (room temperature)
  • ½ cup Greek yogurt (any fat level)
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • Cinnamon Sugar Coating & Swirl:
  • ½ cup Domino® Golden Sugar
  • 2 tsp ground cinnamon
  • Butter for greasing the loaf pan

Instructions

  1. Preheat your oven to 350ºF. Grease a standard loaf pan with butter, then coat the inside with a mix of ½ cup Domino® Golden Sugar and 2 tsp cinnamon to create a cinnamon sugar crust.
  2. In a large mixing bowl, combine mashed bananas, melted butter, ¾ cup Domino® Golden Sugar, vanilla extract, eggs, and Greek yogurt. Whisk until smooth.
  3. In a separate bowl, mix the flour, baking soda, salt, and remaining ground cinnamon. Fold the dry ingredients gently into the wet mixture until just combined. Don’t overmix!
  4. Pour half the batter into your prepared loaf pan. Sprinkle half of the reserved cinnamon sugar mixture. Pour in the rest of the batter and top with the remaining cinnamon sugar.
  5. Place in the oven and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let the loaf cool in the pan for 15 minutes before transferring it to a wire rack. Slice and enjoy warm—or cool completely and store for later.

Notes

Use very ripe bananas for maximum sweetness and flavor. For an extra cinnamon swirl effect, gently marble the center layer with a knife before baking. Wrap slices individually in parchment and freeze for up to two months.
