Description

These soft and sweet Linzer cookies have a buttery almond base, a hint of vanilla, and a beautiful jam-filled heart center — perfect for Valentine’s Day gifting or any cozy baking day.


Ingredients

Scale

1 cup unsalted butter, room temperature

1 cup granulated sugar

1/4 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

1/4 teaspoon almond extract

3 cups all-purpose flour

12 cups raspberry or strawberry jam

1 cup powdered sugar (for dusting)


Instructions

1. Cream butter, sugar, and salt together until light and fluffy.

2. Add eggs one at a time, mixing well after each addition.

3. Stir in vanilla and almond extracts until combined.

4. Reduce mixer speed to low and add flour gradually until just mixed.

5. Transfer dough to parchment, cover with another sheet, and roll to about 1/8 inch thick.

6. Chill flattened dough in the refrigerator for 20 minutes.

7. Preheat oven to 350°F and line baking sheets with parchment.

8. Use cookie cutters to make half plain cookies and half with small heart cutouts.

9. Arrange cookies on sheets and freeze 3–5 minutes to prevent spreading.

10. Bake 8–10 minutes, keeping edges pale and soft.

11. Cool completely before assembly.

12. Dust powdered sugar on the top (cutout) cookies only.

13. Spread jam on plain bottoms, then sandwich with the sugar-dusted tops.

Notes

Dust only the top cookie halves with powdered sugar to keep the jam window clear.

Chill dough both before cutting and before baking to maintain shape.

Avoid overbaking — cookies should remain pale and soft.

Try flavor variations like Nutella, lemon curd, or apricot jam.

Store cookies in an airtight container in the refrigerator for up to one week.
