Description

These Spiced Crumbl Carrot Cake Cookies are soft, thick, and warmly spiced with cinnamon, ginger, and allspice. Each cookie is topped with smooth cream cheese frosting and finished with chopped pecans. Perfect for Easter or spring baking.


Ingredients

1/3 cup brown sugar

1/3 cup granulated sugar

1/2 cup freshly shredded carrots

1 tablespoon vanilla extract

1 egg yolk

3 tablespoons heavy cream

1 3/4 cups all purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/8 teaspoon allspice

1/4 teaspoon ground ginger

Pinch of cloves

1/4 teaspoon salt

4 ounces softened cream cheese

3 tablespoons softened butter (for frosting)

1 teaspoon vanilla extract (for frosting)

3/4 cup powdered sugar

Chopped pecans for topping


Instructions

1. Preheat oven to 350°F and line a baking sheet with parchment paper.

2. Cream the butter, brown sugar, and granulated sugar until light and fluffy.

3. Mix in shredded carrots, vanilla extract, egg yolk, and heavy cream until smooth.

4. Stir in flour, baking powder, baking soda, salt, cinnamon, allspice, ginger, and cloves just until combined.

5. Divide dough into 8 large balls and flatten slightly on prepared baking sheet.

6. Bake for about 12 minutes until edges are set and centers remain soft.

7. Allow cookies to cool completely on the baking sheet.

8. Beat cream cheese and softened butter until smooth.

9. Add vanilla extract and powdered sugar and beat until creamy.

10. Spread frosting over cooled cookies and sprinkle with chopped pecans.

Notes

Frost cookies only after they cool completely.

Chilling the dough for 20 to 30 minutes creates thicker cookies.

Finely shred carrots for the best texture.

Adjust spice amounts to taste if desired.

Store refrigerated up to 7 days.

Freeze unfrosted cookies up to 2 months and thaw before frosting.
