Description
A creamy, pink, and giftable Valentine’s dessert made from strawberry cake mix, cream cheese, and smooth vanilla coating. These bite-sized truffles are easy to make, perfectly sweet, and great for gifting or snacking.
Ingredients
15.25 oz strawberry cake mix (e.g. Betty Crocker)
8 oz block cream cheese, softened
⅓ cup cream cheese chips, roughly chopped
2 bags (10 oz each) Ghirardelli vanilla melting wafers
½ cup Wilton pink candy melts
½ cup Wilton bright pink candy melts
Sprinkles (optional)
Instructions
1. Preheat oven to 350°F. Spread cake mix on a parchment-lined baking sheet and bake for 5 minutes to heat-treat. Cool completely.
2. In a bowl, beat cream cheese until smooth. Mix in cooled cake mix until dough forms.
3. Stir in cream cheese chips. Cover and chill dough for 2 hours.
4. Scoop into 1½ tablespoon portions, roll into balls, and rest at room temperature for 15 minutes.
5. Melt vanilla wafers using a double boiler or microwave until smooth.
6. Dip each ball into melted coating, tap off excess, and place on parchment.
7. Top half with sprinkles before coating dries.
8. Melt pink and bright pink candy melts separately, drizzle over truffles, and let set before serving.
Notes
Makes about 20 truffles.
Store in an airtight container in the fridge for up to 5 days.
Chilling the dough helps with rolling.
Resting before dipping prevents cracking.
Microwave method: Heat-treat cake mix for 3 minutes, stirring every 30 seconds.
