Description

Strawberry Cheesecake Brownies feature a dense fudgy chocolate base topped with a creamy cheesecake layer and finished with a sweet strawberry swirl. This layered dessert is rich, smooth, and perfectly balanced with chocolate and fruit flavors. Ideal for parties, holidays, or make-ahead treats.

Ingredients

Scale

1 cup granulated sugar

½ cup all-purpose flour

⅓ cup Dutch-processed cocoa powder

¼ teaspoon kosher salt

¼ teaspoon baking powder

2 large eggs, room temperature

1 teaspoon vanilla extract

½ cup unsalted butter, melted and cooled

16 ounces cream cheese, room temperature

2 large eggs, room temperature (for cheesecake layer)

⅓ cup granulated sugar (for cheesecake layer)

1 teaspoon vanilla extract (for cheesecake layer)

¼ teaspoon kosher salt (for cheesecake layer)

1½ cups strawberry pie filling

Instructions

1. Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper, leaving extra overhang for easy removal.

2. Mix sugar, flour, cocoa powder, salt, and baking powder in a bowl. In a separate bowl, whisk together eggs, vanilla, and melted butter until smooth, then combine with the dry ingredients just until incorporated.

3. Spread the brownie batter evenly into the prepared pan.

4. Beat cream cheese, eggs, sugar, vanilla, and salt until creamy and smooth. Pour this mixture evenly over the brownie layer.

5. Spoon strawberry pie filling over the cheesecake layer and gently swirl it with a knife to create a marbled effect without blending into the brownie base.

6. Bake for 35 to 40 minutes, or until the cheesecake layer is set in the center.

7. Cool at room temperature for about 1 hour, then refrigerate for at least 4 hours before slicing and serving.

Notes

Ensure cream cheese and eggs are at room temperature for a smooth cheesecake layer.

Chilling is necessary for clean slices and proper texture.

Alternative pan sizes can be used, but baking time may need adjustment.

Homemade strawberry topping can replace canned pie filling by cooking fresh strawberries with sugar and lemon juice, then cooling before use.

Store covered in the refrigerator for 3 to 4 days.

Freeze fully chilled brownies tightly wrapped for up to 3 months and thaw overnight in the refrigerator before serving.
