Description
Strawberry Cheesecake Cookies are soft, chewy strawberry cookies topped with rich cream cheese frosting. Made with cake mix, they come together quickly and taste like a bakery treat.
Ingredients
1 box strawberry cake mix
2 teaspoons baking powder
2 large eggs
1/4 cup vegetable oil
1/2 cup chopped fresh strawberries
8 oz cream cheese softened
4 tablespoons unsalted butter softened
2 1/2 cups powdered sugar
1 teaspoon vanilla extract
6 strawberries sliced
Instructions
1. Preheat oven to 325°F and line baking sheets with parchment paper
2. Whisk eggs and oil together until smooth
3. Mix cake mix and baking powder in another bowl
4. Combine wet and dry ingredients into a thick dough
5. Fold in chopped strawberries gently
6. Scoop dough into balls and place on baking sheets
7. Bake 15 to 20 minutes until lightly golden
8. Cool completely before decorating
9. Crumble one cookie for topping
10. Beat cream cheese butter and vanilla until smooth then add powdered sugar
11. Frost cookies using piping bag
12. Top with crumbs and sliced strawberries
Notes
Let cookies cool before frosting
Add fresh strawberries right before serving
Do not overbake to keep cookies soft
Fold strawberries gently to avoid excess moisture
