Ingredients
1/2 cup plain Greek yogurt
3 oz cream cheese, softened
1 cup unsweetened almond milk
2 tbsp pure maple syrup
1 tsp vanilla extract
1 cup old fashioned oats
1 tbsp chia seeds
1/2 cup strawberries, diced
Pinch of salt
1/2 cup strawberries, chopped (for topping)
1 tbsp pure maple syrup (for topping)
Instructions
1. Whisk together the cream cheese, Greek yogurt, almond milk, maple syrup, and vanilla extract until smooth.
2. Stir in the oats, chia seeds, salt, and diced strawberries until evenly combined.
3. Transfer to an airtight container and refrigerate overnight until thick and creamy.
4. In a small pan, cook chopped strawberries and maple syrup over medium heat until softened.
5. Mash lightly and simmer until the mixture becomes saucy, then cool completely.
6. Stir the strawberry topping into the oats or spoon it on top before serving.
7. Serve chilled or warm gently if preferred.
Notes
Whisk the cream cheese well to avoid lumps and create a smooth texture.
Adjust the milk amount to make the oats thicker or looser.
Do not skip the overnight chill time for best results.
The strawberry topping can be made ahead and stored separately.
Store in an airtight container in the fridge for up to 5 days.
