Description
A cool, creamy, and vibrant strawberry Jello poke cake with layers of sweet strawberry flavor soaked into a soft white cake and topped with whipped cream. Perfect for picnics, birthdays, or any sunny day treat.
Ingredients
1 box (15.25 oz) white cake mix plus the water, oil, and eggs as directed
1 box (3 oz) strawberry Jell-O mix
1 cup boiling water
½ cup cold water
1 tub (8 oz) Cool Whip, thawed
Sliced strawberries, for garnish (optional)
Instructions
1. Prepare the white cake according to package directions in a 9×13-inch pan. Bake and let cool for about 15 minutes.
2. Poke holes across the surface using the handle of a wooden spoon or a large fork.
3. In a bowl, dissolve strawberry Jell-O in 1 cup boiling water, stirring until dissolved.
4. Add ½ cup cold water to the mixture and stir again.
5. Slowly pour the Jell-O mixture evenly over the cake, making sure it seeps into the holes.
6. Refrigerate the cake for at least 3 hours until the gelatin is fully set.
7. Once chilled, spread Cool Whip evenly over the top.
8. Garnish with sliced strawberries before serving, if desired.
Notes
For best results, make the cake a day ahead to let flavors blend.
Store covered in the refrigerator for up to three days.
Can be frozen (after Jell-O sets) for up to 3 months; thaw in fridge before topping with Cool Whip.
