Description

Soft, chewy pink Strawberry Kiss Cookies made from cake mix, rolled in pink sanding sugar, and finished with frozen chocolate truffle Hershey’s Kisses perfect for Valentine’s Day or gifting.


Ingredients

Scale

1 box strawberry cake mix (dry mix only)

8 tablespoons unsalted butter, melted

1 large egg

1 teaspoon strawberry extract

4 ounces cream cheese, softened

Pink sanding sugar

48 chocolate truffle Hershey’s Kisses


Instructions

1. Unwrap Hershey’s Kisses and freeze them in a bowl.

2. Mix cake mix, melted butter, egg, and strawberry extract until dough forms. Add softened cream cheese and mix thoroughly.

3. Chill dough for at least 1 hour until firm.

4. Preheat oven to 350°F.

5. Scoop dough into 48 portions and roll each in pink sanding sugar.

6. Place 12 dough balls on a baking tray and bake for 8 minutes.

7. Let cookies sit on the baking tray for 2 minutes, then transfer to parchment paper or cooling rack.

8. While warm, press a frozen kiss into the center of each cookie. Allow to cool completely before storing.

Notes

Freeze kisses beforehand to prevent them from melting too much.

Chilling the dough makes it easier to shape and reduces stickiness.

Cookies will appear soft and puffy out of the oven but firm up as they cool.
