Description

These Strawberry Oatmeal Bars feature a buttery oat crumble crust and topping with a sweet, juicy strawberry filling. Made with simple pantry ingredients, they bake into bakery-style bars perfect for snacks, potlucks, or make-ahead desserts.


Ingredients

½ cup unsalted butter, melted

1 cup all-purpose flour

¾ cup old-fashioned rolled oats

½ cup granulated sugar

¼ cup light brown sugar, packed

½ teaspoon salt

2 cups fresh strawberries, coarsely chopped

⅓ cup granulated sugar for filling

2 tablespoons lemon juice

2 teaspoons cornstarch


Instructions

1. Preheat oven to 350°F and line an 8-inch square pan with foil or parchment, then grease it.

2. In a large bowl, stir melted butter, flour, oats, both sugars, and salt until a crumbly mixture forms.

3. Set aside about 1 heaping cup of the mixture for the topping.

4. Press the remaining mixture firmly into the prepared pan to form the crust.

5. In a separate bowl, toss chopped strawberries with sugar, lemon juice, and cornstarch until evenly coated.

6. Spread the strawberry mixture evenly over the crust layer.

7. Sprinkle the reserved crumble evenly over the top without pressing down.

8. Bake for about 50 minutes, until the topping is lightly golden and the filling is bubbling and set.

9. Allow the bars to cool completely for about 1 hour before slicing for clean cuts.

Notes

Use old-fashioned rolled oats for the best texture. Quick oats may result in a drier crumble.

If strawberries release excess juice, extend baking time slightly so the filling sets properly.

Cooling completely is essential or the bars may fall apart when sliced.

You may slightly reduce the sugar in the filling if desired, but reducing sugar in the crumble can affect texture.

If using frozen strawberries, thaw and drain well before using.

Recipe can be doubled and baked in a 9×13-inch pan with similar baking time.
