Description

These no-bake Strawberry Shortcake Truffles Treats are creamy, candy-coated, and full of festive charm. Perfect for holidays or gifting, they come together quickly and chill beautifully for a smooth, strawberry-rich bite.


Ingredients

Scale

1 box extra moist strawberry cake mix

227 grams cream cheese, softened

1 teaspoon vanilla extract

260 grams light pink candy melts

90 grams white candy melts

Crumbled shortcake, for topping


Instructions

1. Line a baking sheet with parchment paper.

2. In a bowl, combine cake mix, softened cream cheese, and vanilla; mix for 2–3 minutes until smooth and vibrant pink.

3. Using a 2.5 cm scoop, portion and roll mixture into balls, then place on the baking sheet.

4. Refrigerate for 60 minutes.

5. Melt pink candy melts in a microwave-safe bowl at 50% power for 1 minute, then in 30-second intervals until smooth.

6. Dip chilled truffles into the melted candy, coat evenly, remove excess, and place back on the sheet.

7. Chill coated truffles for another 30 minutes.

8. Melt white candy melts in the same way, then drizzle over truffles using a piping bag.

9. While still wet, sprinkle crumbled shortcake on top.

10. Refrigerate again for 30 minutes before serving.

Notes

Ensure cream cheese is fully softened for easier mixing.

Adjust microwave time depending on wattage.

Store in an airtight container in the refrigerator.

Use vegan cream cheese or Greek yogurt as substitutions.

Add lemon zest or shredded coconut for flavor.
