Ingredients
3 cups strawberries, fresh or frozen, stems removed
1/4 cup sweetener of choice such as sugar, maple syrup, honey, agave, or xylitol
2 teaspoons lemon juice or zest of one lemon
Optional pinch of salt
Instructions
1. Freeze strawberries if using fresh, or start with pre-frozen fruit.
2. Add frozen strawberries, sweetener, lemon juice, and optional salt to a blender.
3. Blend until smooth and thick like sorbet.
4. If using a regular blender, let the fruit soften slightly before blending.
5. For an even smoother texture, churn the blended mixture in an ice cream machine.
6. Serve immediately for the best texture, or freeze and thaw slightly before serving.
Notes
Lemon juice adds brightness but can be left out for a milder flavor.
A pinch of salt helps the sweetness stand out.
You can use different sweeteners based on your dietary needs, including sugar-free options.
The best texture comes on the day you make it because there are no stabilizers.
After freezing, the sorbet gets very firm, so let it sit a few minutes before scooping.
