Description

Street Corn Chicken Rice Bowls combine juicy spiced chicken, creamy street corn, and fluffy rice into a quick, high protein dinner packed with smoky, tangy, and fresh flavors.


Ingredients

1 1/2 lb chicken breast, cut into small pieces

1 tsp garlic powder

1 tsp smoked paprika

1 tsp cumin

Salt and pepper to taste

Optional chipotle powder

1 tbsp avocado oil

1 tbsp honey

Juice of 1 lime

2 cups frozen corn

1/2 tsp salt

1 tsp ancho chili powder

1/2 cup plain Greek yogurt or mayonnaise

Juice and zest of 1 lime

1/4 cup finely chopped red onion

1/4 cup chopped green bell pepper or jalapeño

1/3 cup cotija cheese

1/4 cup chopped cilantro

3 cups cooked rice

1 avocado, sliced


Instructions

1. Cut chicken into small pieces and coat with garlic powder, smoked paprika, cumin, salt, pepper, and optional chipotle powder

2. Heat avocado oil in a skillet over medium high heat and cook chicken until lightly browned

3. Add honey and lime juice, then continue cooking until chicken is fully cooked and slightly glazed; remove and reserve pan juices

4. In the same pan, add corn with salt and chili powder and sauté on high heat until heated through and lightly charred

5. In a bowl, mix yogurt, lime juice, and zest, then stir in onion, pepper, cotija cheese, cilantro, and cooked corn

6. Assemble bowls with rice as the base, then add avocado slices, corn mixture, and chicken

7. Drizzle reserved pan juices over the top before serving

Notes

Increase chipotle powder after cooking if you prefer more heat

Finely chop vegetables for a smoother texture in the corn mixture

Cook chicken in batches to achieve better browning

Use high heat for corn to get a light char without burning

Store components separately for up to 4 days

Reheat rice and chicken before assembling and add fresh toppings just before serving
